Wheat allergy refers to the abnormal reaction of immune system caused due to the protein contained in the wheat grain. Wheat is generally composed of two main proteins, namely gliadins and glutenins that combine together to form gluten. It is this gluten that induces certain immunoglobulin E mediated reactions and gives rise to the wheat allergy symptoms.

Wheat allergy can cause atopic dermatitis and sometimes, asthma and urticaria and, rarely, exercise induced anaphylaxis. Wheat allergy should not be confused with celiac disease, which is sensitivity to the glutin in wheat and other grains.  People with celiac disease have to avoid barley, rye, and oat as well. Wheat contains four allergens: albumin, globulin, gliadian, and wheat gluten.

People with wheat allergy must follow restricted diets because wheat is so widely used. It is ordinarily found In bread, cookies, crackers, and other baked goods; many beverages, including ale, beer and malted milk; breakfast foods, bran and cereals; candy; ice cream products; batter-fried foods; meat products such as burgers, meat loaf, hot dogs, and sausage.

Less commonly known sources of wheat are bulgur, starch, drum, emmer, einkorn, farina, gelatinized starch, hydrolyzed vegetable protein, natural flavoring, soybeen paste, hoisin sauce, vegetable gum, and whole-wheat berries.

There are flour substitutes for people with wheat allergy. These include amaranth, arrow root, buckwheat, corn, flax seed meal, wheat-free millet, oat, potato, rice, soybean, tapioca, and chia seed flour.

People who are severely sensitive to wheat may have reactions when their skin comes into contact with a wheat-containing food, when they breathe in wheat flour dust, or inhale the allergen while harvesting wheat. Anaphylaxis to what is rare but does exist among some people. For those who have a tendency to this severe infection, the anaphylaxis may be induced by exercise.
